Moroccan summer salad
A simple and spicy salad. If preferred, adjust the amount of harissa or cayenne, or leave it out for a refreshing summer salad.
- - 1 punnet of cherry tomatoes - halved
- - 1 lebanese cucumber - sliced
- - 1 bunch coriander - leaves picked & roughly torn
- - 1 bunch fresh mint - leaves picked & roughly torn
- - 1 spanish onion - thinly sliced
- - ½ bag bean sprouts
Dressing
- 2 tablespoons olive oil
- 1 tablespoon honey
- 3 tablespoons lemon juice
- ½ teaspoon harissa or ¼ teaspoon cayenne pepper
Combine all ingredients in a serving bowl and toss well before serving. To make the dressing, whisk all the ingredients to combine thoroughly. This can be prepared the day before to allow the flavours to intensify.
